Carne Asada Fajitas with Shishito Peppers and Cilantro Lime Sour Cream

1-2 Pounds of Marinated Carne Asada (Trader Joe's), Sliced Into Bite Sized Pieces and Dried
Pancetta, Small Cubed
8 Ounces of Sour Cream
2 Limes, 1 Juiced and 1 Quartered
1 Pound of Shishito Peppers, Stems Cut Off and Halved
8 Ounces of Mini Bell Peppers, Stems Cut Off and Thinly Sliced
1/2 a Vidalia Onion, Thinly Sliced
1/2 a Red Onion, Thinly Sliced
1 Bunch of Fresh Cilantro, Chopped
10 Flour Tortillas
Heat a skillet over medium high heat with some olive oil. Add the pancetta, shishitos, mini peppers, and both onions. Stir frequently until the vegetables are browned and softened and the pancetta is crisp. Remove from heat and add the carne asada to the pan. Cook, flipping occasionally, until there is a char on both sides and the juices begin to leave the meat. Add the vegetables back to the pan. Stir frequently and combine until hot.
Meanwhile in a blender combine the sour cream, lime zest, lime juice, and the cilantro, seasoning with salt and pepper. Plate as follows: Tortilla, carne asada and vegetables, and cilantro lime sour cream.
